- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 cup chicken broth
- 1 cup shredded Gruyere cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until caramelized, about 15-20 minutes.
- Season the chicken breasts with salt, pepper, and thyme. Push the onions to the side of the skillet and add the chicken breasts, browning them on both sides for about 5 minutes.
- Pour the chicken broth over the chicken and onions, then sprinkle the Gruyere and Parmesan cheese on top.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
