Description

Freakin’ Fantastic Fried Rice is a delicious and easy-to-make dish that combines savory flavors with a mix of vegetables, chicken, and fluffy rice. Perfect for a quick meal or as a side dish.


Ingredients

3 cups cooked white rice, chilled
3 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons vegetable oil
1 cup mixed vegetables (peas, carrots, corn)
1 small onion, diced
3 cloves garlic, minced
2 eggs, beaten
1/2 cup cooked chicken, diced
Salt and pepper to taste
Green onions for garnish


Instructions

In a small bowl, mix soy sauce and sesame oil. Set aside.
In a large skillet or wok, heat vegetable oil over medium-high heat.
Add diced onion and minced garlic, sauté until fragrant.
Push the onion and garlic to one side of the skillet, pour beaten eggs onto the empty side.
Scramble the eggs until cooked, then mix with the onion and garlic.
Add mixed vegetables and cooked chicken to the skillet, stir-fry for a few minutes.
Add chilled white rice to the skillet, breaking up any clumps.
Pour the soy sauce mixture over the rice, stir well to combine.
Season with salt and pepper to taste.
Cook for an additional 5-7 minutes, stirring occasionally.
Garnish with chopped green onions before serving.
