Description

This Fiesta Shrimp Rice Bowl is a colorful and flavorful meal that combines juicy shrimp with a medley of veggies and spices. It’s easy to make and perfect for a quick and tasty dinner.

1 lb large shrimp, peeled and deveined
2 cups cooked white rice
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 cup frozen corn, thawed
1 can black beans, drained and rinsed
1 avocado, sliced
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
Salt and pepper to taste


Instructions

In a small bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper.
Marinate the shrimp in the spice mixture for 15 minutes.
In a large skillet over medium heat, cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
In the same skillet, add a little more olive oil if needed and sauté the bell peppers and red onion until tender.
Add the corn and black beans to the skillet and heat through.
Divide the rice among serving bowls and top with the sautéed vegetables and shrimp.
Garnish with avocado slices, fresh cilantro, and lime wedges.
