This Feta Cheese & Honey Cake is a unique and delicious dessert that combines the savory richness of feta cheese with the sweetness of honey in a moist and tender cake.
Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 tablespoons lemon zest (from about 2 lemons)
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 large eggs
1/2 cup honey
1 cup crumbled feta cheese
Instructions
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a mixing bowl, cream together the butter and powdered sugar until light and fluffy. Stir in the lemon zest.
In a separate bowl, whisk together the flour, baking powder, and salt.
Add the eggs one at a time to the butter mixture, beating well after each addition.
Gradually mix in the honey.
Fold in the dry ingredients until just combined.
Gently fold in the crumbled feta cheese.
Pour the batter into the prepared cake pan and smooth the top.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serve slices of the cake drizzled with additional honey, if desired.
