- 4 salmon fillets
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season salmon fillets with salt and pepper and sear them skin-side down for about 4-5 minutes.
- Flip the salmon and cook for an additional 3-4 minutes until cooked through.
- In a separate pot, bring vegetable broth to a boil and cook orzo according to package instructions.
- Once orzo is cooked, drain and mix in lemon juice, lemon zest, garlic, and parsley.
- Serve the seared salmon over the lemon orzo and garnish with additional parsley if desired.
Notes
- Make sure to not overcook the salmon for the best texture.
