- 12 ounces of pasta
- 1 tablespoon olive oil
- 3 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced tomatoes, vegetable broth, garlic powder, onion powder, salt, and pepper.
- Bring the mixture to a boil.
- Add the pasta and cook according to package instructions, stirring occasionally.
- In the last 2 minutes of cooking, add the chopped spinach.
- Once the pasta is cooked, remove from heat and let it sit for a few minutes.
- Serve with grated Parmesan cheese on top.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- For a spicy kick, add red pepper flakes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
