  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced tomatoes, vegetable broth, garlic powder, onion powder, salt, and pepper.
  3. Bring the mixture to a boil.
  4. Add the pasta and cook according to package instructions, stirring occasionally.
  5. In the last 2 minutes of cooking, add the chopped spinach.
  6. Once the pasta is cooked, remove from heat and let it sit for a few minutes.
  7. Serve with grated Parmesan cheese on top.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms.
  • For a spicy kick, add red pepper flakes.
