- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 can (14 oz) diced tomatoes
- 1/2 cup pitted olives, sliced
- 2 tbsp capers, rinsed
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the garlic and red pepper flakes, sautéing until fragrant.
- Stir in the diced tomatoes, olives, and capers.
- Add the spaghetti and enough water to cover it by about an inch.
- Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and the water is mostly absorbed.
- Remove from heat, stir in the parsley, and season with salt and pepper to taste.
- Serve hot and enjoy!
