Ingredients

  • 12 oz spaghetti
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup pitted olives, sliced
  • 2 tbsp capers, rinsed
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the garlic and red pepper flakes, sautéing until fragrant.
  3. Stir in the diced tomatoes, olives, and capers.
  4. Add the spaghetti and enough water to cover it by about an inch.
  5. Bring to a boil, then reduce heat and simmer, stirring occasionally, until the pasta is al dente and the water is mostly absorbed.
  6. Remove from heat, stir in the parsley, and season with salt and pepper to taste.
