- 8 oz pasta (penne or fusilli)
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine the cherry tomatoes, olive oil, garlic, red pepper flakes, salt, and pepper.
- Place the block of feta cheese in the center of the tomatoes.
- Bake for 30 minutes until the tomatoes burst and the feta is soft.
- Meanwhile, cook the pasta according to package instructions; drain.
- Once baked, stir the tomatoes and feta together to create a sauce.
- Add the cooked pasta to the baking dish and mix until well coated.
- Garnish with fresh basil and serve immediately.
Notes
- For a creamier sauce, add a splash of pasta water when mixing the pasta with the sauce.
- You can substitute feta with goat cheese for a different flavor.
- This dish can be served warm or at room temperature.
