Ingredients

  • 9 lasagna noodles
  • 1 lb sliced mushrooms
  • 1 chopped onion
  • 2 cloves minced garlic
  • 10 oz fresh spinach
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella
  • 1 cup grated Parmesan
  • 1 egg
  • 24 oz marinara sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp nutmeg
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Cook lasagna noodles according to package instructions.
  3. Sauté mushrooms, onions, and garlic until soft.
  4. Add spinach and cook until wilted. Set aside.
  5. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, salt, pepper, and nutmeg.
  6. Spread marinara sauce in a baking dish.
  7. Layer noodles, cheese mixture, and spinach mixture. Repeat.
  8. Top with remaining mozzarella and Parmesan.
  9. Cover with foil and bake for 25 minutes.
  10. Uncover and bake for 5-10 minutes until bubbly.
  11. Rest for 10 minutes before serving.
