Deliciously creamy lasagna with spinach and mushrooms
Ingredients

- 9 lasagna noodles
- 1 lb sliced mushrooms
- 1 chopped onion
- 2 cloves minced garlic
- 10 oz fresh spinach
- 15 oz ricotta cheese
- 2 cups shredded mozzarella
- 1 cup grated Parmesan
- 1 egg
- 24 oz marinara sauce
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp nutmeg
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Cook lasagna noodles according to package instructions.
- Sauté mushrooms, onions, and garlic until soft.
- Add spinach and cook until wilted. Set aside.
- In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, salt, pepper, and nutmeg.
- Spread marinara sauce in a baking dish.
- Layer noodles, cheese mixture, and spinach mixture. Repeat.
- Top with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes.
- Uncover and bake for 5-10 minutes until bubbly.
- Rest for 10 minutes before serving.

- Add cooked ground beef for a meaty version.
- Use no-boil lasagna noodles to save time.
- Fresh herbs like basil or oregano add extra flavor.
