- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup vanilla pudding mix
- 1 cup milk
- 1/2 cup chocolate frosting
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add softened butter, egg, and vanilla extract to the dry ingredients and mix until well combined.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are set.
- Let the cookies cool completely on a wire rack.
- In a separate bowl, whisk together the vanilla pudding mix and milk until smooth. Let it sit for a few minutes to thicken.
- Once the cookies are cool, spoon a small amount of pudding onto the center of half of the cookies, and top with the other half to create sandwiches.
- Drizzle chocolate frosting over the top of each cookie sandwich before serving.
Notes
- For a richer flavor, you can use dark chocolate cocoa powder.
- Store leftover cookie bites in an airtight container in the refrigerator.
