- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups heavy cream
- 8 ounces lasagna noodles, broken
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until soft.
- Stir in the shredded chicken, chicken broth, diced tomatoes, and heavy cream.
- Add the broken lasagna noodles and Italian seasoning; cook until noodles are tender.
- Season with salt and pepper to taste.
- Stir in the ricotta cheese until well combined.
- Serve hot, garnished with mozzarella and Parmesan cheese.
