These Delicious Mediterranean Steak Bowls are packed with flavor and wholesome ingredients. Tender grilled steak slices served over a bed of quinoa, fresh vegetables, and tangy feta cheese make for a satisfying and nutritious meal.
Ingredients
1 lb flank steak
1/4 cup olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley
1/4 cup kalamata olives, pitted and sliced
Instructions
In a small bowl, whisk together olive oil, garlic, oregano, basil, salt, and pepper to create the marinade.
Place flank steak in a resealable plastic bag and pour the marinade over the steak. Seal the bag and massage the steak to ensure it’s evenly coated. Marinate in the refrigerator for at least 1 hour.
Preheat grill to medium-high heat. Remove steak from marinade and discard excess marinade. Grill steak for 4-6 minutes per side, or until desired doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and kalamata olives. Toss to mix well.
Divide the quinoa mixture among serving bowls. Top each bowl with sliced flank steak.
Serve the Mediterranean steak bowls immediately and enjoy!
