- 1 ½ cups crushed pistachios
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 cup cherry pie filling
- 1/2 cup whipped cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine crushed pistachios and 1/4 cup of sugar, then press into the bottom of a springform pan to form the crust.
- In a separate bowl, beat the cream cheese until smooth, then add the remaining sugar, eggs, vanilla, lemon juice, and lime juice. Mix until well combined.
- Pour the cream cheese mixture over the pistachio crust in the springform pan.
- Bake in the preheated oven for 45-50 minutes, or until set. Allow to cool for 1 hour.
- Spread the cherry pie filling over the cooled cheesecake.
- Top with whipped cream and sprinkle additional crushed pistachios if desired.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- Ensure the cream cheese is at room temperature for easier mixing.
- For an extra tart flavor, add more lime juice.
- This cheesecake can be made a day in advance for better flavor.
