Description

A delightful cheesecake combining the zesty flavors of lemon and lime with sweet cherries and crunchy pistachios, creating a blissful dessert experience.


Ingredients

  • 1 ½ cups crushed pistachios
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 1 cup cherry pie filling
  • 1/2 cup whipped cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed pistachios and 1/4 cup of sugar, then press into the bottom of a springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth, then add the remaining sugar, eggs, vanilla, lemon juice, and lime juice. Mix until well combined.
  4. Pour the cream cheese mixture over the pistachio crust in the springform pan.
  5. Bake in the preheated oven for 45-50 minutes, or until set. Allow to cool for 1 hour.
  6. Spread the cherry pie filling over the cooled cheesecake.
  7. Top with whipped cream and sprinkle additional crushed pistachios if desired.
  8. Chill in the refrigerator for at least 4 hours before serving.
