Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup cornstarch
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 2 egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into bottom of a springform pan.
  2. In a bowl, beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
  3. Bake for 30 mins. Cool, then chill for 4 hours.
  4. Meanwhile, make custard: combine sour cream, cornstarch, milk, heavy cream, 1/2 cup sugar, egg yolks, butter, and vanilla. Cook until thick.
  5. Chill custard for 2 hours. Pour over cheesecake layer. Chill for another 4 hours before serving.

Notes

  • For a quicker version, use store-bought custard.
  • Top with chocolate ganache or fresh berries for extra flair.
