- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/4 cup cornstarch
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 2 egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into bottom of a springform pan.
- In a bowl, beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
- Bake for 30 mins. Cool, then chill for 4 hours.
- Meanwhile, make custard: combine sour cream, cornstarch, milk, heavy cream, 1/2 cup sugar, egg yolks, butter, and vanilla. Cook until thick.
- Chill custard for 2 hours. Pour over cheesecake layer. Chill for another 4 hours before serving.
Notes
- For a quicker version, use store-bought custard.
- Top with chocolate ganache or fresh berries for extra flair.
