  • 1 cup cherry pie filling
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 2 tablespoons cocoa powder
  • Chocolate shavings for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine chocolate graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully incorporated.
  5. Pour the cream cheese mixture over the prepared crust and smooth the top.
  6. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  8. Remove from the oven and refrigerate for at least 4 hours or overnight.
  9. Before serving, whip the heavy cream with powdered sugar and cocoa powder until soft peaks form.
  10. Spread the cherry pie filling on top of the cheesecake, then top with whipped cream, chocolate shavings, and fresh cherries.
