- 1 ½ cups chocolate graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 2 tablespoons cocoa powder
- Chocolate shavings for garnish
- Fresh cherries for garnish
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine chocolate graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully incorporated.
- Pour the cream cheese mixture over the prepared crust and smooth the top.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight.
- Before serving, whip the heavy cream with powdered sugar and cocoa powder until soft peaks form.
- Spread the cherry pie filling on top of the cheesecake, then top with whipped cream, chocolate shavings, and fresh cherries.
