Instructions
- Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture, then squeeze excess liquid out.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, green onions, garlic, black pepper, and paprika. Mix until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Form the zucchini mixture into small patties and carefully place them in the hot oil.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and drain on paper towels.
- Serve warm with your favorite dipping sauce.
