- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1 cup grated Parmesan cheese
- 2 large eggs
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine breadcrumbs, Parmesan cheese, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast first in the eggs, then coat with the breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking sheet and finish cooking in the oven for 15-20 minutes.
- In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
- Serve the chicken with the garlic sauce drizzled over it and garnish with fresh parsley.
Notes
- For extra flavor, marinate the chicken in garlic and herbs for a few hours before cooking.
- Serve with a side of pasta or steamed vegetables.
- This dish can be made gluten-free by using gluten-free breadcrumbs.
