- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 package (9 oz) cheese tortellini
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until translucent, about 3-4 minutes.
- Stir in garlic and cook for another minute.
- Pour in vegetable broth and bring to a boil.
- Add tortellini and cook according to package instructions, usually about 5-7 minutes.
- Reduce heat, stir in heavy cream, spinach, and Italian seasoning.
- Season with salt and pepper to taste.
- Simmer for a couple of minutes until heated through and spinach is wilted.
- Serve hot and enjoy!
