Ingredients
12 oz pasta
1 tbsp olive oil
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
1/2 cup ricotta cheese
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste
Instructions
Cook pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add diced tomatoes with their juices to the skillet. Let it simmer for 10 minutes.
Stir in ricotta cheese, heavy cream, and Parmesan cheese until well combined and creamy.
Add cooked pasta to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes.
Season with salt and pepper to taste.
Remove from heat and stir in chopped basil.
Serve hot, garnished with additional Parmesan cheese and basil leaves if desired.
