Ingredients
4 salmon fillets
Salt and pepper to taste
1/4 cup all-purpose flour
2 tablespoons olive oil
4 tablespoons unsalted butter
3 cloves garlic, minced
1 cup chicken broth
1/4 cup fresh lemon juice
1/4 cup capers, drained
1/4 cup heavy cream
2 tablespoons chopped fresh parsley
Instructions
Season the salmon fillets with salt and pepper, then coat them in flour.
In a large skillet, heat olive oil over medium-high heat.
Add the salmon fillets and cook until golden brown, about 4-5 minutes per side. Remove from skillet and set aside.
In the same skillet, melt butter. Add garlic and cook until fragrant, about 1 minute.
Stir in chicken broth, lemon juice, and capers. Bring to a simmer and cook for 5 minutes.
Reduce heat to low and stir in heavy cream. Cook for an additional 2 minutes.
Return the salmon fillets to the skillet and spoon the sauce over them. Cook for another 2-3 minutes until salmon is cooked through.
Garnish with chopped parsley before serving.
