- 2 pounds red potatoes
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup celery, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash and cut the red potatoes into bite-sized pieces.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool completely.
- In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, and mix well.
- Add the cooled potatoes, celery, red onion, and parsley to the bowl, and stir gently to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 1 hour before serving to let flavors meld.
