Ingredients
2 lbs red potatoes, washed and diced
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons Dijon mustard
1/4 cup fresh parsley, chopped
2 tablespoons fresh chives, chopped
1 tablespoon fresh dill, chopped
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Place the diced red potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool.
In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, parsley, chives, dill, garlic powder, salt, and pepper.
Add the cooked red potatoes to the bowl and gently toss to coat the potatoes with the creamy herb mixture.
Refrigerate the potato salad for at least 1 hour before serving to allow the flavors to meld together.
