Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a pot, brown the sausage over medium heat.
  2. Add onions and garlic, cook until softened.
  3. Pour in chicken broth and tomatoes, bring to a simmer.
  4. Stir in pasta, cook until al dente.
  5. Pour in cream, add parmesan, season with salt and pepper.
  6. Simmer for 5 more minutes, then serve.

Notes

  • You can use mild or spicy sausage based on preference.
  • For a thicker soup, add more parmesan cheese.
  • Leftovers can be thickened with a little more cream.
