- 2 pounds potatoes, peeled and diced
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup green onions, chopped
- 1 cup celery, diced
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in a large pot until tender, about 10-15 minutes.
- Drain the potatoes and let them cool.
- In a large bowl, combine mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Add the cooled potatoes, green onions, celery, cheddar cheese, and bacon to the bowl.
- Toss gently to combine all ingredients well.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a healthier version, use Greek yogurt instead of mayonnaise.
- Feel free to add other vegetables like bell peppers or pickles for extra crunch.
