  • 8 oz fettuccine pasta
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lb salmon fillet, skinless
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Season the salmon fillet with salt and pepper, then place it in the skillet. Cook for 4-5 minutes on each side until cooked through. Remove salmon and set aside.
  5. Pour heavy cream into the skillet and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  6. Flake the cooked salmon into bite-sized pieces and add it back to the skillet with the sauce.
  7. Add the cooked fettuccine to the skillet, tossing to coat in the creamy sauce.
  8. Garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Make sure not to overcook the salmon to keep it tender.
