- 8 oz fettuccine pasta
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 lb salmon fillet, skinless
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine according to package instructions; drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Season the salmon fillet with salt and pepper, then place it in the skillet. Cook for 4-5 minutes on each side until cooked through. Remove salmon and set aside.
- Pour heavy cream into the skillet and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Flake the cooked salmon into bite-sized pieces and add it back to the skillet with the sauce.
- Add the cooked fettuccine to the skillet, tossing to coat in the creamy sauce.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Make sure not to overcook the salmon to keep it tender.
- This dish pairs well with a side salad or steamed vegetables.
