- 1 9-inch pie crust
- 1 cup chopped pecans
- 3 large eggs
- 1 cup cream of coconut
- 1/2 cup brown sugar
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F.
- Sprinkle pecans over the pie crust.
- In a bowl, whisk eggs, cream of coconut, brown sugar, butter, vanilla, and salt.
- Pour mixture over pecans.
- Bake for 30 minutes until set.
- Let cool before serving.
Notes
- You can add a sprinkle of cinnamon for extra flavor.
