Cream Cheese Stuffed Mini Peppers are a delicious and colorful appetizer perfect for parties or gatherings. These bite-sized treats are filled with a creamy cheese mixture and baked until warm and slightly golden.
Ingredients
12 mini sweet peppers
8 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 cup green onions, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional)
Instructions
Preheat the oven to 375°F (190°C).
Cut the mini sweet peppers in half lengthwise and remove the seeds.
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper.
Mix until all ingredients are well combined and creamy.
Using a spoon or a piping bag, fill each pepper half with the cream cheese mixture.
Place the stuffed peppers on a baking sheet lined with parchment paper.
Bake in the preheated oven for 15-20 minutes, or until the peppers are tender and the cheese is slightly golden.
Remove from the oven and let cool for a few minutes.
Garnish with fresh parsley if desired and serve warm.
