Ingredients

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1/2 cup ranch dressing
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, corn, black beans, bell pepper, red onion, and cheddar cheese.
- In a separate small bowl, whisk together the ranch dressing, lime juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Garnish with fresh cilantro and serve chilled or at room temperature.

- Feel free to add grilled chicken or beef for extra protein.
