- 1 cup couscous
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook the couscous according to package instructions and set aside to cool.
- In a large bowl, combine the black beans, corn, cherry tomatoes, bell pepper, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Add the cooled couscous to the vegetable mixture and pour the dressing over it.
- Toss everything together until well combined.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- This salad can be made a day in advance; just add the avocado right before serving to prevent browning.
- Feel free to customize with other vegetables or proteins as desired.
