Description

Ingredients

  • 1 cup couscous
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to package instructions and set aside to cool.
  2. In a large bowl, combine the black beans, corn, cherry tomatoes, bell pepper, avocado, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Add the cooled couscous to the vegetable mixture and pour the dressing over it.
  5. Toss everything together until well combined.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made a day in advance; just add the avocado right before serving to prevent browning.
