- 1 pound fresh green beans, trimmed
- 1 pound baby potatoes, halved
- 4 slices bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
- Add the chopped onion to the pot and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Add the halved potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add the green beans and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste. Stir in the cooked bacon before serving.
Notes
- For a vegetarian version, omit the bacon and use vegetable broth.
- Feel free to add other vegetables like carrots or bell peppers.
- Leftovers can be stored in the refrigerator for up to 3 days.
