Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 pound baby potatoes, halved
  • 4 slices bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion to the pot and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the halved potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the green beans and continue to simmer for another 10-15 minutes, or until the vegetables are tender.
  6. Season with salt and pepper to taste. Stir in the cooked bacon before serving.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • Feel free to add other vegetables like carrots or bell peppers.
