Description
Colombian Papas Rellenas are delicious stuffed potato balls filled with savory meat and spices, then fried to golden perfection.
Ingredients

- 2 pounds of potatoes
- 1 cup of cooked ground beef
- 1/2 cup of diced onions
- 1/2 cup of diced tomatoes
- 1/4 cup of chopped cilantro
- 1 teaspoon of cumin
- Salt to taste
- 1 cup of breadcrumbs
- 2 eggs
- Oil for frying
Instructions
- Boil the potatoes until tender, then peel and mash them.
- In a skillet, sauté onions and tomatoes until soft, then add ground beef, cumin, and salt. Cook until meat is browned.
- Mix the meat filling with chopped cilantro and let it cool.
- Take a portion of mashed potato, flatten it in your palm, and place a spoonful of the meat mixture in the center.
- Fold the potato over the filling and shape it into a ball.
- Beat the eggs in a bowl, and place breadcrumbs in another bowl.
- Dip each potato ball in the egg, then roll in breadcrumbs.
- Heat oil in a frying pan and fry the balls until golden brown on all sides.
- Remove and drain on paper towels before serving.
Notes
- Make sure the potatoes are well-mashed to prevent the balls from breaking apart.
- You can use chicken or pork instead of beef for the filling.
- Serve with aji sauce for an extra kick.
