Coconut Curry Rice with Grilled Chicken

Description

Delicious and flavorful Coconut Curry Rice served with Grilled Chicken, a perfect blend of spices, coconut and tender chicken.


Ingredients

  • 2 cups Jasmine rice
  • 1 can Coconut milk
  • 1 tablespoon Curry powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 tablespoon Paprika
  • 1/2 teaspoon Cayenne pepper
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a saucepan, combine the rice, coconut milk, curry powder, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until rice is tender.
  3. While the rice is cooking, season the chicken breasts with olive oil, garlic powder, onion powder, paprika, and cayenne pepper.
  4. Preheat a grill or grill pan to medium heat. Cook the chicken for 6-8 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing.
  6. Serve the sliced chicken over the coconut curry rice. Garnish with fresh cilantro.

Notes

  • You can also use brown rice instead of jasmine rice, but cooking time may vary.
  • If you prefer, you can use boneless, skinless chicken thighs instead of chicken breasts.
