Delicious and flavorful Coconut Curry Rice served with Grilled Chicken, a perfect blend of spices, coconut and tender chicken.
Ingredients

- 2 cups Jasmine rice
- 1 can Coconut milk
- 1 tablespoon Curry powder
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 4 Chicken breasts
- 2 tablespoons Olive oil
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 tablespoon Paprika
- 1/2 teaspoon Cayenne pepper
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a saucepan, combine the rice, coconut milk, curry powder, salt, and pepper. Bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes, or until rice is tender.
- While the rice is cooking, season the chicken breasts with olive oil, garlic powder, onion powder, paprika, and cayenne pepper.
- Preheat a grill or grill pan to medium heat. Cook the chicken for 6-8 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Serve the sliced chicken over the coconut curry rice. Garnish with fresh cilantro.
Notes
- You can also use brown rice instead of jasmine rice, but cooking time may vary.
- If you prefer, you can use boneless, skinless chicken thighs instead of chicken breasts.
