A refreshing and hearty Club Sandwich Pasta Salad that combines the classic flavors of a club sandwich with pasta for a delightful twist.

- 8 oz rotini pasta
- 1 cup cooked chicken, diced
- 1 cup cooked bacon, crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine lettuce, chopped
- 1/2 cup cheddar cheese, shredded
- 1/4 cup mayonnaise
- 2 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, chicken, bacon, tomatoes, lettuce, and cheese.
- In a separate bowl, mix the mayonnaise, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumber or bell peppers for extra crunch.
- This salad can be made a day in advance for meal prep.
- For a vegetarian version, omit the chicken and bacon and substitute with chickpeas or tofu.
