- Whisk Your Dry Ingredients:: First things first, grab a medium bowl and whisk together your flour, baking soda, ground ginger, cinnamon, cloves, and salt. Make sure it’s all really well combined; you don’t want a rogue pocket of baking soda in your cookies, trust me on that one. - Cream Butter & Sugar:: In a larger bowl, or your stand mixer, beat the room-temperature unsalted butter and dark brown sugar together until it’s light and fluffy.
