- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup water
- 1/2 cup brown sugar
- 1 tablespoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another bowl, combine vegetable oil, granulated sugar, and eggs until smooth.
- Add pumpkin puree and water to the wet mixture and mix until well combined.
- Gradually blend the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix brown sugar and cinnamon, then sprinkle on top of the batter.
- Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For a richer flavor, add chopped nuts or chocolate chips to the batter.
- Store in an airtight container for up to a week.
- This bread freezes well; wrap tightly in plastic wrap and foil for up to 3 months.
