  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup water
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine vegetable oil, granulated sugar, and eggs until smooth.
  4. Add pumpkin puree and water to the wet mixture and mix until well combined.
  5. Gradually blend the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. In a small bowl, mix brown sugar and cinnamon, then sprinkle on top of the batter.
  8. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
