Description

Chicken Guajillo is a flavorful Mexican dish made with dried guajillo chiles, giving the chicken a rich, smoky flavor.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 5 dried guajillo chiles
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove stems and seeds from the guajillo chiles, then soak them in hot water for 15 minutes.
  3. In a blender, combine softened chiles, onion, garlic, cumin, oregano, and 1 cup of chicken broth. Blend until smooth.
  4. Season chicken thighs with salt and pepper.
  5. In a large oven-safe skillet, heat olive oil over medium-high heat and sear chicken thighs skin-side down until golden brown, about 5 minutes.
  6. Flip the chicken and pour the blended sauce over the top. Add the remaining chicken broth.
  7. Transfer the skillet to the oven and bake for 30-35 minutes, or until the chicken is cooked through and juices run clear.
  8. Garnish with fresh cilantro before serving.
