Chicken Guajillo is a flavorful Mexican dish made with dried guajillo chiles, giving the chicken a rich, smoky flavor.

- 4 chicken thighs, bone-in and skin-on
- 5 dried guajillo chiles
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Remove stems and seeds from the guajillo chiles, then soak them in hot water for 15 minutes.
- In a blender, combine softened chiles, onion, garlic, cumin, oregano, and 1 cup of chicken broth. Blend until smooth.
- Season chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat and sear chicken thighs skin-side down until golden brown, about 5 minutes.
- Flip the chicken and pour the blended sauce over the top. Add the remaining chicken broth.
- Transfer the skillet to the oven and bake for 30-35 minutes, or until the chicken is cooked through and juices run clear.
- Garnish with fresh cilantro before serving.
Notes
- Ensure the guajillo chiles are properly soaked to soften them for blending.
- Adjust the seasoning according to your taste.
- This dish can be served with rice or tortillas.
