Description

A delicious and easy Chicken Fried Rice recipe that’s perfect for using up leftover rice and chicken.


Ingredients

  • 2 cups cooked rice
  • 1 cup diced cooked chicken
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the mixed vegetables and sauté for 2-3 minutes until tender.
  3. Push the vegetables to the side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked.
  4. Add the diced chicken and cooked rice to the skillet, stirring to combine.
  5. Pour the soy sauce and sesame oil over the rice mixture, stirring to evenly coat.
  6. Add the chopped green onions and season with salt and pepper. Stir well and cook for another 2 minutes.
  7. Serve hot and enjoy!

  • Use day-old rice for better texture.
