A delicious and easy Chicken Fried Rice recipe that’s perfect for using up leftover rice and chicken.
Ingredients

- 2 cups cooked rice
- 1 cup diced cooked chicken
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the mixed vegetables and sauté for 2-3 minutes until tender.
- Push the vegetables to the side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked.
- Add the diced chicken and cooked rice to the skillet, stirring to combine.
- Pour the soy sauce and sesame oil over the rice mixture, stirring to evenly coat.
- Add the chopped green onions and season with salt and pepper. Stir well and cook for another 2 minutes.
- Serve hot and enjoy!
Notes
- Use day-old rice for better texture.
- Feel free to add other proteins or vegetables as desired.
- Adjust the soy sauce based on taste preference.
