Ingredients
8 ounces rotini pasta
2 cups cooked chicken breast, diced
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup grated Parmesan cheese
1/2 cup Caesar dressing
1/4 cup croutons
Salt and pepper to taste
1 tablespoon olive oil (optional)
Instructions
Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooked pasta, diced chicken, chopped romaine lettuce, and halved cherry tomatoes.
Add the Caesar dressing to the bowl and toss gently until all ingredients are well coated.
Sprinkle the grated Parmesan cheese over the salad and toss again to combine.
Season with salt and pepper to taste. If desired, drizzle with olive oil for added richness.
Top with croutons just before serving for extra crunch.
Serve chilled or at room temperature.
Notes
For a lighter version, use grilled chicken and a light Caesar dressing. You can also add other vegetables like cucumbers or bell peppers for extra flavor and nutrition.
