Ingredients

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup fresh or frozen cherries, pitted and chopped
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the chopped cherries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter muffin, you can add an additional 1/4 cup of sugar.
- Feel free to substitute other berries if cherries are not available.
- Store leftovers in an airtight container at room temperature for up to 3 days.
