Description
Delicious cheesy ground beef quesadillas that are easy to make and perfect for any meal.
Ingredients

- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- 4 large flour tortillas
- 2 tbsp olive oil
Instructions
- In a skillet over medium heat, cook the ground beef until browned.
- Add the onion and garlic, and sauté until the onion is translucent.
- Stir in chili powder, cumin, salt, and pepper; mix well.
- Remove from heat and mix in the cheddar and mozzarella cheeses.
- Heat one tablespoon of olive oil in a separate skillet over medium heat.
- Place a tortilla in the skillet, and spread half of the beef and cheese mixture on one half of the tortilla.
- Fold the tortilla over to cover the filling and cook for about 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm.
Notes
- Feel free to add additional vegetables like bell peppers or mushrooms.
- Serve with salsa or sour cream for dipping.
- Store leftovers in an airtight container in the refrigerator.
