- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 cup beef broth
- 12 oz cheese tortellini
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef to the skillet, breaking it apart and cooking until browned.
- Stir in the enchilada sauce, beef broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a simmer, then add the cheese tortellini.
- Cover and cook for about 8-10 minutes, or until the tortellini is tender.
- Remove the lid and stir in half of the shredded cheese until melted.
- Top with the remaining shredded cheese and cover again until melted.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- For a spicier dish, add diced jalapeños or a dash of hot sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- This recipe can be made with ground turkey or chicken as a leaner option.
