  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 cup beef broth
  • 12 oz cheese tortellini
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground beef to the skillet, breaking it apart and cooking until browned.
  4. Stir in the enchilada sauce, beef broth, chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a simmer, then add the cheese tortellini.
  6. Cover and cook for about 8-10 minutes, or until the tortellini is tender.
  7. Remove the lid and stir in half of the shredded cheese until melted.
  8. Top with the remaining shredded cheese and cover again until melted.
  9. Garnish with fresh cilantro if desired and serve hot.

  • For a spicier dish, add diced jalapeños or a dash of hot sauce.
