Cajun White Chicken Chili: A Spicy Comfort Food Delight

A hearty and spicy twist on traditional chili, this Cajun White Chicken Chili combines tender chicken, white beans, and bold Cajun spices for a comforting meal that’s perfect for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 cup corn (frozen or fresh)
  • 1/2 cup heavy cream
  • Chopped green onions and cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add the chicken breasts, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned.
  5. Pour in the chicken broth and add the white beans and diced green chilies. Bring to a simmer.
  6. Reduce heat and cover, cooking for 20-25 minutes until the chicken is cooked through.
  7. Remove the chicken from the pot, shred it with two forks, and return it to the pot.
  8. Add the corn and heavy cream, stirring well to combine. Simmer for another 5 minutes.
  9. Serve hot, garnished with chopped green onions and cilantro.

Notes

  • For extra heat, add more cayenne pepper or serve with hot sauce.
  • This chili can be made ahead of time and reheats well.
  • Feel free to add other vegetables like bell peppers or zucchini for additional flavor and nutrition.
