A hearty and spicy twist on traditional chili, this Cajun White Chicken Chili combines tender chicken, white beans, and bold Cajun spices for a comforting meal that’s perfect for any occasion.

- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 4 cups chicken broth
- 1 can (4 oz) diced green chilies
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup corn (frozen or fresh)
- 1/2 cup heavy cream
- Chopped green onions and cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add the chicken breasts, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned.
- Pour in the chicken broth and add the white beans and diced green chilies. Bring to a simmer.
- Reduce heat and cover, cooking for 20-25 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it with two forks, and return it to the pot.
- Add the corn and heavy cream, stirring well to combine. Simmer for another 5 minutes.
- Serve hot, garnished with chopped green onions and cilantro.
Notes
- For extra heat, add more cayenne pepper or serve with hot sauce.
- This chili can be made ahead of time and reheats well.
- Feel free to add other vegetables like bell peppers or zucchini for additional flavor and nutrition.
