Ingredients
1 lb shrimp, peeled and deveined
1 lb salmon fillets
2 tablespoons Cajun seasoning
1/4 cup olive oil
1/4 cup butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
4 large potatoes, peeled and cubed
1/2 cup milk
1/4 cup sour cream
2 tablespoons butter
Chopped parsley for garnish
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, toss shrimp and salmon with Cajun seasoning and olive oil. Place on a baking sheet.
Bake in the preheated oven for 15-20 minutes or until cooked through.
While the seafood is baking, prepare the garlic cream sauce. In a skillet, melt butter over medium heat. Add garlic and cook until fragrant.
Stir in heavy cream and Parmesan cheese. Simmer for 5-7 minutes until the sauce thickens. Season with salt and pepper.
In a separate pot, boil the potatoes until tender. Drain and mash with milk, sour cream, and butter. Season with salt and pepper.
To serve, plate the mashed potatoes, top with Cajun shrimp and salmon, and drizzle with garlic cream sauce. Garnish with chopped parsley.
