Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, cream together the butter, honey, and brown sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the orange juice, grated ginger, and orange zest.
- In a separate bowl, mix the flour, baking powder, baking soda, salt, and spices.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a spicier cake, increase the amount of grated ginger.
