Deliciously soft and chewy cookies inspired by the classic Boston cream pie, featuring a rich chocolate topping and a creamy filling.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- While the cookies cool, whisk together the heavy cream and powdered sugar until soft peaks form to create a filling.
- Once the cookies are cool, spread a layer of the cream filling on the bottom of half the cookies and top with the other half to create sandwiches.
- Melt additional chocolate chips and drizzle over the top of the cookie sandwiches for a chocolate glaze.
Notes
- For an extra flavor boost, add a teaspoon of almond extract to the dough.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for later enjoyment; just thaw before serving.
