Boston Cream Pie Cookies Soft and Chewy Delight


Description

Deliciously soft and chewy cookies inspired by the classic Boston cream pie, featuring a rich chocolate topping and a creamy filling.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. While the cookies cool, whisk together the heavy cream and powdered sugar until soft peaks form to create a filling.
  10. Once the cookies are cool, spread a layer of the cream filling on the bottom of half the cookies and top with the other half to create sandwiches.
  11. Melt additional chocolate chips and drizzle over the top of the cookie sandwiches for a chocolate glaze.

Notes

  • For an extra flavor boost, add a teaspoon of almond extract to the dough.
  • Store cookies in an airtight container for up to a week.
  • These cookies can be frozen for later enjoyment; just thaw before serving.
