Blueberry Pudding Cake

Ingredients

  • 2 cups fresh blueberries
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add in the milk, melted butter, and vanilla extract, and mix until well combined.
  4. Fold in the blueberries gently into the batter.
  5. Pour the batter into a greased baking dish.
  6. In a separate bowl, mix together the water and remaining sugar, then pour it over the batter in the baking dish.
  7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick comes out clean.
  8. Let cool for a few minutes before serving. Enjoy warm or at room temperature.

Notes

  • For a twist, add a sprinkle of cinnamon or nutmeg to the batter.
