- 2 boneless, skinless chicken breasts
- 1 cup fresh blackberries
- 6 cups mixed greens (spinach, arugula, etc.)
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for 6-7 minutes on each side or until cooked through.
- While the chicken is grilling, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
- In a large bowl, combine the mixed greens, blackberries, and feta cheese.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Add the sliced chicken on top of the salad and drizzle with the balsamic dressing.
- Toss gently and serve immediately.
Notes
- For added flavor, marinate the chicken in balsamic vinegar for 30 minutes before grilling.
- Feel free to substitute with other berries or add nuts for crunch.
