- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes per side. Remove chicken and slice.
- In the same skillet, add minced garlic and sun-dried tomatoes; sauté for 1-2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Add the cooked pasta and sliced chicken to the skillet; toss to combine.
- Garnish with fresh basil and serve immediately.
Notes
- For a lighter version, you can substitute heavy cream with half-and-half or a non-dairy cream.
