4 large bell peppers, any color
1 lb ground beef
1 cup cooked rice
1 can (14.5 oz) diced tomatoes, drained
1/2 cup diced onion
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese


Instructions

Preheat the oven to 350°F (175°C).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Stir in the cooked rice, diced tomatoes, onion, garlic, oregano, basil, salt, and black pepper. Cook for 5 minutes.
Stuff the bell peppers with the beef mixture and place them in a baking dish.
Cover the dish with foil and bake for 25 minutes.
Uncover the dish, sprinkle the mozzarella cheese on top of each pepper, and bake for an additional 5 minutes until the cheese is melted and bubbly.
