- 2 medium sweet potatoes, diced
- 1 lb chicken breast, boneless and skinless
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- On a baking sheet, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Roast the sweet potatoes in the oven for 25-30 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, season the chicken breasts with salt and pepper, and grill or sauté them over medium heat until cooked through, about 6-7 minutes per side.
- Once cooked, brush the chicken with BBQ sauce and let it cook for an additional 2-3 minutes to caramelize.
- Slice the chicken and serve it over the roasted sweet potatoes. Drizzle with more BBQ sauce and garnish with fresh parsley.
