  • 1 lb chicken breast, boneless and skinless
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Roast the sweet potatoes in the oven for 25-30 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt and pepper, and grill or sauté them over medium heat until cooked through, about 6-7 minutes per side.
